Maehwa Köyü Daap Yesil Çay

Daap yeşil çayı genellikle Maehwa Köyü'nde yetiştirilir. Baekun Daği kenar vadisinde olduğu gibi kirletilmemiş Seomjin nehri, çökelmeyle oluşmuş arazi ve güneş ışığını az alan yarı gölgeli bir yer ve çay ağaçlarını yetiştirmek için uygun bir yer. İyi bir ürün için bunlar göz önünde bulundurulur.
Yeşil çay yaklaşık olarak 1100 yıl önce yabani yetişirdi. Kıs zamanı sırasında şiddetli rüzgâra rağmen tazeliği korurdu, bir yıl sonra nisanda baslarız sert olmayan, yumuşak, taze ve yeni filizleri toplarız, yeşil çayı atalarından onlara geçen el-yapımı çay sistemini takip ederek yapıyorlar. Çay malzemesi toprağı isleme koşullarına, yaprakları toplama zamanına, iklim ve çay yaprağını yapma metotlarına göre türlere ayrılır.
Daap yeşil çay yaprağı bir serçe dilini andırır. Ona ''Serçe çay yaprağı'' deriz. Güzel kokulu çiçek açar ve rengi yeşime benzer ve güçlü bir tadı vardır.
Bir insan için kurutulan yaprağın miktarı, yaklaşık olarak 2 gram demlik içine koyuyoruz ve 70-80 santigrat sıcaklıkta su döküyoruz. Çayın tadını ve demini dengelemek için bir süre bekliyoruz.
Daap Green Tea
Daap Green Tea which is also produced in Maehwa Village, as it is produced in the edge valley of Mt. Baekun and unpolluted Seomjin river, the area has precipitation and a half-shady spot which has low sunshine, and it is a very suitable place for growing tea trees. So it is considered as a good product.
The green tea started to grow wild about 1,100 years ago, it contains freshness despite ferocious wind during the winter time, in the start of the April a year after, we pick tender, mild, fresh and new sprout, following hand-made tea system which is handed down from our ancestors, we make green tea. The ingredient of tea differs from the kinds, conditions of cultivation, the time of picking leaves, climate and methods of making tea leaf. Daap Green Tea is considered one of the best green teas, as its new leaves before Gokwu(April 20), picking leaves without any machine but only with hands, following the traditional treatment method, it provides the best taste and scent.
The Daap Green Tea is purchased and commercialized by Daap Agricultural Cooperatives, the tea leaves reach 30 tons when they were first gathered, but after finishing treated only 12 tons remains, by knowing this situation, we can conclude they are doing their best to giving the strict quality control. The product which has experienced all the process is sold through the nation-wide Agricultural Cooperatives, supermarkets, Hanaro Marts and on-line, but it is under-supplied.
Daap Green Tea Leaf resembles the tongue of a sparrow. We call it "Sparrow tea leaf". Its booming scent and color is like jade and a strong-taste tea. So, the mineral water is preferred than tap water when we make Daap Green Tea.
Quantity of dried leaf for a person is approximately 2 grams, we put it in a teapot and pour water which is got cool until 70 to 80 Celsius, to balance the taste and thickness of the tea, we soak it for a couple of minutes.
When we drink tea, we hold the tea cup with our right hands, and support the tea cup with our left hands, in order not to make noise, and to feel five different tastes and the atmosphere of peacefulness.
